My dear friend Phyllis Stanley introduced me to her Chicken Quinoa Salad one day and I had THREE servings!
It is fantastic.
I know some of you have never heard of Quinoa. So let me clue you in here quinoa's taste and texture is a bit like brown rice crossed with oatmeal. It’s fluffy, creamy, crunchy and somewhat nutty, all rolled into one but a whole lot more flavorful and extremely healthy for you. Once you start cooking this stuff...you are hooked!
Of all the whole grains, quinoa has the most protein, so it's perfect for vegetarians. Quinoa provides all 9 essential amino acids, making it a complete protein. Quinoa is a gluten-free and cholesterol-free whole grain, and is almost always organic.
Now with all that said you wonder does this little grain taste good?
YES! Try it. Even picky eater love this recipe!

Chicken Quinoa with Grapes
Cook 2 cups quinoa using package instructions.
Add
1/2 cup cashews halved
1 cup green grapes halved
1 med red onion chopped
1/2 chopped sweet yellow pepper
1 cup cooked Chicken
3 Tbsp. chopped fresh basil
1 tsp lemon grass
Top with Newman's Own or a Raspberry vinaigrette dressing. Arrange on fresh spinach leaves. Garnish with avocado slices.
You can also add 1 cup celery, chopped tomatoes or carrots
