I still give rave reviews on this delicious easy supper recipe. (They call it suppa in Texas!) I serve it with wild rice and grilled or baked lemon asparagus.
GREAT for company...GREAT for freezing...just GREAT...you'll see!
Easy Pecan Chicken
Cut up 4 chicken breast in fourths.
Dip Chicken in melted butter (about a half stick)
Then place chicken in a mix of chopped pecans and seasoned Italian bread crumbs.
Place in pan sprayed with Pam.
Bake at 350 degrees covered with foil for 30-40mins...remove foil for the last 5 minutes for so to crunch up the top.
White sauce
Melt ½ cup butter add 1/3 cup flour and cook for one minute stirring.
Add chicken broth slowly…until you get the consistency you want…(about 2-3 cans) I also like to add one cup of white wine for a wonderful flavor!
Add 2 tablespoon fresh chopped basil, thyme, or oregano
1 tablespoon finely chopped green onion
Add Dijon mustard to taste…(I like a lot of this stuff...and the stone ground variety is the best!)
Salt and pepper
Serve with white sauce over the chicken breast. Yummy
Looks wonderful! I'm curious to know how it would taste if you added some honey to the mustard......something I may have to try!

Well....I've made this chicken recipe....BIG HIT!!!!
It is delicious!!! Thank you for sharing! Best of all it was sooooo easy! My Prince LOVED it! even the leftovers...it's just the 2 of us, so there was a nice a mount of leftovers for us!
